咸中带甜酱茄子
Steamed Brinjals with Minced Meat Sauce
材料

2条茄子
3大匙油
2小匙蒜茸
2大匙葱头仔碎
100g肉碎
2大匙豆酱

调味料

1/2大匙生抽
1小匙糖
少许胡椒粉
100ml水
1棵青葱 (切粒)
1条红辣椒 (去籽切粒)

做法
  1. 茄子放入蒸笼里大火蒸15分钟,或至软,取出用筷子稍微掰开。
  2. 烧热油,爆香蒜头和葱头仔,加入肉碎炒香,再加入豆酱炒匀。
  3. 加入调味料煮滚,淋在茄子上,并撒上青葱和红辣椒粒,即可享用。
INGREDIENTS

2 brinjals
3 tbsp oil
2 tsp copped garlic
2 tbsp chopped shallots
100g minced pork
2 tbsp fermented soya bean paste

SEASONING

1/2 tbsp light soya sauce
1 tsp sugar
dash of pepper
100ml water
1 stalk spring onion (diced)
1 red chili seeded (diced)

METHOD

  1. Steam brinjals over high heat for 15 minutes or until soft. Remove from heat and use a pair of chopstick or a fork to separate the brinjals
  2. Heat up oil, saute chopped garlic and shallots until fragrant. Add in minced meat and stir-fry until aromatic. Add in fermented soya beans and stir-fry until well mixed.
  3. Add seasoning and bring to boil. Pour the sauce over the brinjals and sprinkle spring onion and red chili on top. Serve.
