肠粉菜卷
Rolled Vegetables with Chee Cheong Fun
材料

5条猪肠粉
1大匙蒜茸
25g虾米 (浸过,剁碎)
5朵冬菇 (浸过,切丝)
5g木耳 (浸过,切丝)
300g沙葛 (切丝)
150g萝卜 (切丝)
1块五香豆干 (切丝,炸香)
少许青葱 (切粒)

调味料

1大匙蚝油

1大匙生抽

1小匙麻油

1小匙盐

1小匙胡椒粉

1小匙粟粉

酱汁(拌匀)

5大匙生抽

1大匙蚝油

1大匙麻油

2大匙炸葱油

做法
  1. 烧热2大匙油,爆香蒜茸和虾米,加入冬菇和木耳丝炒匀,加入沙葛、红萝卜丝和调味料炒匀,最后加入炸香豆腐干炒匀,撒上少许粟粉,离火待冷。
  2. 摊开猪肠粉,放上适量馅料,卷起。
  3. 将猪肠粉卷蒸3分钟,取出,淋上酱汁便可享用。
INGREDIENTS

5 piece chee cheong fun
1 tbsp chopped garlic
25g dried shrimps (soaked and chopped)
5 black mushrooms (soaked and sliced)
5 black fungus (soaked and shredded)
300g sengkuang (shredded)
150g carrot (shredded)
1 piece five spice taukua (stripped and prefried)
A little spring onion (chopped)

SEASONING

1 tbsp oyster sauce

1 tbsp soya sauce

1 tsp sesame oil

1 tsp salt
1 tsp pepper

1 tsp cornstarch

SWEET SAUCE(MIXED WELL)

5 tbsp soya sauce

1 tbsp oyster sauce

1 tbsp sesame oil

2 tbsp fried shallot oil

METHOD

  1. Heat up 2 tbsp oil, saute chopped garlic and dried prawns until fragrant. Add in the black mushrooms, small fungus shreds and stir-fry until well mixed. Add in sengkuang,carrots seasoning and stir-fry until well mixed. Lastly add pre fried taukua strips and stir well, Sprinkle with cornstarch. Remove from heat and leave to cool.
  2. Spread out chee chong fun into a work surface. place a little filling on top and roll up.
  3. Steam chee chong fun for 3 minutes. Remove and pour the sweet sauce and serve.
