印尼香辣黄豆饼炒虾米
Indonesian Spicy Tempe With Dried Prawns
材料

3杯炸油
3包天贝(发酵黄豆饼),切小块

A

2大匙葱头仔碎
1大匙蒜茸
50g虾米,浸软,剁碎
3条指天椒,切片

B

2大匙或适量糖调味
2/3小匙或适量盐
1小匙阿三膏,加入3大匙水,挤汁
2大匙沙榄叶幼丝

做法
  1. 烧热炸油,将发酵黄豆饼用中火炸至金黄色,捞起沥干。
  2. 留油2大匙,加入A料炒香,加入发酵黄豆饼和B料炒匀,继续用中火炒至干身,试味。
  3. 最后加入沙榄叶炒匀,盛起。
INGREDIENTS

3 cups oil for deep-frying
3 packets tempe, cut into small pieces
20g green tea powder

A

2 tbsp chopped shallots
1 tbsp chopped garlic
50g dried prawns, soaked and chopped
3 chilli padi, sliced

B

2 tbsp sugar or to taste
2/3 tsp salt or to taste
1 tsp assam paste, squeezed with 3 tbsp water
2 tbsp finely shredded daun salam

METHOD

  1. PHeat up oil, deep-fry Tempe with medium high heat till golden brown. Dish and drain.
  2. Leave 2 tbsp oil in wok, add A and stir-fry till aromatic. Add fried Tempe, B and mix well. Keep stir-frying with medium heat till dry. Taste.
  3. Lastly add daun Salam, mix well and dish up.
  4. Serve with rice.
