香辣小鱼干
Hot and Spicy Small Dried Fish
材料

2杯炸油
50g花生
300g小鱼干 (洗净,沥干水份)
1大匙蒜茸
2条红辣椒 (去籽,切粒)
1棵青葱 (切粒)
1大匙炒香芝麻

调味料

2大匙豆酱
1大匙辣椒酱
1小匙糖

做法
  1. 烧热油锅, 将小鱼干和花生分别炸至香脆,捞起沥干油份。
  2. 留2大匙油爆香蒜茸和辣椒,加入调味料炒香。
  3. 加入小鱼干炒匀,并撒上青葱和芝麻即可享用。
INGREDIENTS

2 cups oil for deep-frying
50g peanuts
300g small dried fish (cleaned)
1 tbsp chopped garlic
2 red chillies (seeded and chopped)
1 stalk spring onion (diced)
1 tbsp toasted sesame seeds

SEASONING

2 tbsp fermented soya bean paste (taucu)
1 tbsp chilli sauce
1 tsp sugar

METHOD

  1. Heat up oil for deep-frying, deep-fry dried fish and peanuts separately until crispy. Dish and drain.
  2. Leave 2 tbsp oil, saute chopped garlic and chilli until aromatic. Add in seasoning and stir-fry until fragrant.
  3. Add in small dried fish and stir-fry until well mixed. Sprinkle spring onion and sesame seeds on top. Serve.
