香蕉糯米糕
Glutinous Rice with Banana Filling
材料

500g糯米,浸水4小时,滤干水
300ml浓椰浆
½小匙盐
½大匙糖
3片香兰叶
8张香蕉叶25×25CM,烫软,抹干水
4条香蕉,去皮,切块,泡在*椰浆糖水料里隔夜,捞起待用

做法
  1. 把材料加一起拌匀,放入大盘里,放入煮滚水的蒸笼里,大火蒸45分钟至糯米熟透,取出拌松,分成8份待用。
  2. 摊开1张香蕉叶,放入1份糯米,摆上香蕉,包起,折好,重复至材料用完。
  3. 把两包的折口对放,用绳子绑好,放入煮滚水的蒸笼里,大火蒸25分钟即可。
  4. 取出,趁温热或放凉之后享用皆可。
注:椰浆糖水料做法请参考印尼香蕉椰汁软糕食谱。
INGREDIENTS

500g glutinous rice, soaked 4 hours and drained
300ml thick coconut milk
½ tsp salt
½ tbsp sugar
3 pieces pandan leaf
8 pieces banana leaf (25cm X 25cm), softened and wiped dry
4 bananas, peeled and cut into pieces, soaked in * coconut milk syrup for overnight and drained

METHOD

  1. Combine all ingredients and mix well. Transfer the mixture into a steaming tray and steam at high heat for 45 minutes or until well cooked. Remove from heat and fluff up the glutinous rice. Divide into 8 equal portions and set aside.
  2. Lay a piece of banana leaf onto a work surface and put a portion of glutinous rice on it. Arrange banana onto the rice and wrap up as picture shown. Repeat the same for the remaining ingredients.
  3. Tie 2 of the banana parcel together and steam at high heat for 25 minutes.
  4. Remove and serve warm of cold.
