烧汁排骨
Fried Spare Ribs in Special Sauce

材料

500g排骨,斩块
100g粟粉
4杯炸油
3大匙油
1粒洋葱,切碎

腌料

½小匙鸡精粉
¼小匙盐
2小匙糖
1大匙生抽
1小匙麻油
¼小匙五香粉
1粒蛋白
2小匙蛋黄粉
1大匙绍兴酒
2大匙水

汁料(拌匀)

100ml水
1大匙番茄酱
1大匙急酱
1大匙HP酱
1大匙生抽
2大匙糖

做法
  1. 把排骨加入腌料充分拌匀,腌1小时。
  2. 沾上粟粉,放入热油里炸至金黄色和熟,捞起,滤干油,备用。
  3. 用3大匙油,炒香洋葱,加入汁料拌煮至滚和浓稠。
  4. 加入炸好的排骨,快速炒匀,即可。
INGREDIENTS

500g spare ribs, cut into pieces
100g cornstarch
4 cups oil for deep-frying
3 tbsp oil
1 onion, chopped

MARINADE

½ tsp chicken stock powder
¼ tsp salt
2 tsp sugar
1 tbsp light soya sauce
1 tsp sesame oil
¼ tsp five spice powder
1 egg white
2 tsp custard powder
1 tbsp shaoxing wine
2 tbsp water

SAUCE (MIXED)

100ml water
1 tbsp tomato sauce
1 tbsp worcestershire sauce
1 tbsp HP sauce
1 tbsp light soya sauce
1 tbsp sugar

METHOD

  1. Combine spare ribs with marinade and mix well. Marinate for 1 hour.
  2. Coat spare ribs with cornstarch and deep-fry in hot oil until golden brown and cooked. Dish and drain. Set aside.
  3. Heat up 3 tbsp oil and stir-fry onion until aromatic. Add in sauce ingredients, stir and cook until boiled and thickened.
  4. Add in fried spare ribs and stir-fry until well mixed. Dish up and serve.
