秘制葡萄鱼片
Fried Fish Fillet with Special Grape Sauce

馅料

300g石斑鱼肉,切片
1粒蛋液
4大匙木薯粉
3杯炸油
100ml*秘制葡萄酱

腌料

½小匙糖
½小匙盐
½小匙胡椒粉
1小匙麻油
1大匙油

配料

1粒洋葱,切丝
1粒青芒果,切丝
1条红辣椒,切丝

做法
  1. 把鱼肉片加入腌料,拌匀腌30分钟,沾上蛋液,再沾上木薯粉,放入热油里炸至金黄色和熟,捞起滤干油,待用。
  2. 在干净的镬里放入秘制葡萄酱煮滚,放入炸好的鱼片快速炒匀。
  3. 把配料拌匀铺在碟里,放上炒好的鱼片,即可。
*秘制葡萄酱
材料

1粒橙,剥皮,切块
2支西芹,切块
1条红萝卜,切片
50g芫茜
600ml水
180g糖
180g葡萄酱
125ml白醋
75g番茄酱

做法
  1. 把全部材料拌匀,放入锅里,拌煮至滚,转小火,煮多约45分钟,过滤去渣,即可。
INGREDIENTS

300g garoupa fish fillet, sliced
1 beaten egg
4 tbsp tapioca flour
3 cups oil for deep-frying
100ml * special grape jam sauce

MARINADE

½ tsp sugar
½ tsp salt
½ tsp pepper
1 tsp sesame oil
1 tbsp oil

ACCOMPANIMENTS

1 onion, shredded
1 green mango, shredded
1 red chilli, shredded

METHOD

  1. Combine fish fillet with marinade and mix well. Marinate for 30 minutes. Mix fish fillet with beaten egg and coat with tapioca flour. Deep-fry in hot oil until golden brown and cooked. Dish and drain. Set aside.
  2. In a clean saucepan, bring special grape sauce to boil. Add in fried fish fillet and stir-fry quickly until well mixed.
  3. Mix accompaniments together and spread onto a serving platter. Place fish fillet onto top and serve.
* Special Grape Jam Sauce

INGREDIENTS

1 orange, peeled and cut into pieces
2 stalks celery, cut into pieces
1 carrot, sliced
50g coriander leaves
600ml water
180g sugar
180g grape jam
125ml white vinegar
75g tomato sauce

METHOD

  1. Combine all the ingredients and mix well. Put into a saucepan, stir and bring to boil. Lower the heat and cook for another 45 minutes. Strain and discard the solid ingredients.
