沙谷米水晶粽
Crystal Sago Dumplings

材料A
500g糯米
100g沙谷米
3大匙碱水
1大匙油
300g粽叶,浸软,洗净,煮过
1把咸水草,浸软,洗净,煮过
做法
- 把水倒入糯米中,盖过米面约1寸高,加入1大匙碱水拌匀浸隔夜,洗净,再加水盖过面和1大匙碱水,浸多1夜。
- 洗净糯米,滤干水,加入1大匙油和½大匙碱水拌匀,待用。
- 把沙谷米加入水盖过面,加入½大匙碱水,拌匀浸20分钟,洗净,滤干水。
- 把浸好的糯米和沙谷米一起拌匀。
- 取2片粽叶,折成三角形,放入2大匙拌好的米。折成四角形,用咸水草扎紧。
- 放入滚水里煮3小时即可,取出吊干水分。冷却后沾上细砂糖、咖椰或椰糖浆。

INGREDIENTS
500g glutinous rice
100g sago
3 tbsp alkaline water
1 tbsp oil
300g zhang leaves, soaked, washed and blanched
1 bundle hemp string, soaked, washed and blanched
METHOD
- Pour water into glutinous rice to cover about 1” over them. Mix in 1 tbsp alkaline water and soak for overnight. Wash the rice and pour in water and 1 tbsp alkaline water, soak for overnight.
- Wash the rice and drain well. Add in 1 tbsp oil and ½ tbsp. alkaline water and mix well.
- Pour water into sago rice, add in alkaline water and soak for 20 minutes. Wash and drain well.
- Mix glutinous rice with sago.
- Using 2 pieces of leaves to fold into a cone. Fill in 2 tbsp rice mixture. Press and cover with extended ends of leaves and form into the shape of dumpling. Tie and secure with the hemp.
- Bring water to boil, put in dumplings and cook for 3 hours.
