沙谷米水晶粽
Crystal Sago Dumplings

材料A

500g糯米
100g沙谷米
3大匙碱水
1大匙油
300g粽叶,浸软,洗净,煮过
1把咸水草,浸软,洗净,煮过

做法
  1. 把水倒入糯米中,盖过米面约1寸高,加入1大匙碱水拌匀浸隔夜,洗净,再加水盖过面和1大匙碱水,浸多1夜。
  2. 洗净糯米,滤干水,加入1大匙油和½大匙碱水拌匀,待用。
  3. 把沙谷米加入水盖过面,加入½大匙碱水,拌匀浸20分钟,洗净,滤干水。
  4. 把浸好的糯米和沙谷米一起拌匀。
  5. 取2片粽叶,折成三角形,放入2大匙拌好的米。折成四角形,用咸水草扎紧。
  6. 放入滚水里煮3小时即可,取出吊干水分。冷却后沾上细砂糖、咖椰或椰糖浆。
INGREDIENTS

500g glutinous rice
100g sago
3 tbsp alkaline water
1 tbsp oil
300g zhang leaves, soaked, washed and blanched
1 bundle hemp string, soaked, washed and blanched

METHOD

  1. Pour water into glutinous rice to cover about 1” over them. Mix in 1 tbsp alkaline water and soak for overnight. Wash the rice and pour in water and 1 tbsp alkaline water, soak for overnight.
  2. Wash the rice and drain well. Add in 1 tbsp oil and ½ tbsp. alkaline water and mix well.
  3. Pour water into sago rice, add in alkaline water and soak for 20 minutes. Wash and drain well.
  4. Mix glutinous rice with sago.
  5. Using 2 pieces of leaves to fold into a cone. Fill in 2 tbsp rice mixture. Press and cover with extended ends of leaves and form into the shape of dumpling. Tie and secure with the hemp.
  6. Bring water to boil, put in dumplings and cook for 3 hours.
