巴西黑豆焖猪肉
Brazilian Black Bean with Pork Stew
香料

2片月桂叶
5瓣葱米
1粒洋葱 (切片)
1/2小匙胡椒粒

调味料

3公升水
1小匙盐

材料

300 黑豆 (洗净,浸水隔夜)
1/2只猪手 (斩块,烫洗干净)
100g培根 (切片)
1条猪尾 (切段)
300g花肉 (切块)
100g包菜 (切小块)
1/2大匙粟粉加1大匙水拌匀
适量生菜 (切粗丝)
1粒橙 (切块)

做法
  1. 把香料和调味料煮滚,加入黑豆、猪手和猪尾煮滚,转中小火加盖焖2小时。
  2. 加入其余材料焖多1小时,加入粟粉打芡即可。
  3. 可配上白饭。生菜和橙块享用。
SPICES

2 piece bay leaf
5 pips garlic
1 onion (sliced)
1/2 tsp peppercorns

SEASONING

3 liters water
1 tsp salt

INGREDIENTS

300g black beans (cleaned and soaked overnight)
1/2 pork trotter (cut into piece and blanched)
300g pork belly (cut into pieces)
1 pig tail (cut into short sections)
100g bacon (cut into slice)
100g cabbage (cut into small pieces)
1/2 tbsp cornstarch + 1 tbsp water
Some lettuce (shredded)
1 orange (cut into pieces)

METHOD

  1. Put spices and seasoning into a pot and bring to boil. Add in black beans, pork trotter, tail and bring to oil. Cover with lid and simmer with medium-low heat for 2 hours.
  2. Add in the remaining ingredients and simmer for another 1.
  3. Serve with rice, lettuce and orange.
