Braised Pork Belly in Coconut Water and Eggs
Water of 2 coconuts
150g coconut meat, cut into strips
800g pork belly
5 hard-boiled egg, shelled
2 tbsp fish sauce
3 tbsp rock sugar
1 tsp salt
- Put coconut water and coconut meat into a pot and bring to boil. Add in pork belly, hard-boiled egg, seasoning and bring to boil.
- Lower the heat, cover with lid and simmer for 30-40 minutes or until the meat is tender. Cut into pieces and pour over the gravy. Serve.
