Vegetarian Rojak
酱料

50g素马来栈
100g甜酱
100g麦芽糖
175g糖
2大匙黑酱油
100g阿三膏 (加入 200ml水拌匀,过滤)

材料

2粒青芒果 (切块)
1条黄瓜 (切块)
1粒黄梨 (切块)
1粒沙葛 (切块)
适量炒香花生碎和炒香芝麻
适量素虾饼
适量素三巴虾米 (随意)

做法
  1. 把酱料放入搅拌机里攪至滑,放入镬里煮至浓稠,待冷,待用。
  2. 把材料放入大碗里,加入适量酱料拌匀,撒上花生碎、芝麻和虾饼即可。 (8-10人份)
SAUCE

50g vegetarian belacan
100g sweet sauce
100g maltose
175g sugar
2 tbsp dark soya sauce
100g tamarind pulp (mixed with 200ml water and strained)

INGREDIENTS

2 green mangoes (cut into pieces)
1 cucumber (cut into pieces)
1 pineapple (cut into pieces)
1 yam bean (cut into pieces)
Chopped toasted peanuts and toasted sesame seeds
Vegetarian prawn cracker
Vegetarian dried shrimp sambal (optional)

METHOD

  1. Blend sauce ingredients until fine and cook in a pan until thick. Remove from heat and set aside to cool.
  2. Put all the ingredients into a mixing bowl, add in some sauce and stir well. Sprinkle toasted peanuts, sesame seeds and vegetarian prawn cracker on top. Serve (Serves : 8-10)
